Blueberry Muffins

Let me introduce you to my go to recipe for easy, light, and fluffy blueberry muffins.  I made them for my husband to bring into his office after having two weeks off over the holidays.  They're super versatile and will work well with any fresh fruit you have on hand! I use this recipe from All Recipes and am a huge fan of reading all the comments other bakers have left. I've made some tweaks with the type of fruit I'll use or the amount of vanilla and brown sugar added in the recipe. Once you make these bakery style muffins, I promise you'll never use box mix again!

This recipe makes 12 muffins using a regular size tin or 6 extra large muffins in an extra large tin.

To start you'll need the follow ingredients:

  • 1 1/2 cups of all purpose flour
  • 3/4 cup of white sugar
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 1/3 cup of vegetable oil
  • 1 egg
  • 1/3 cup milk
  • 1 cup fresh blueberries
  • 2/3 cup light brown sugar
  • 1/4 cup all purpose flour
  • 1 1/2 teaspoon cinnamon
  • 1/4 cup cold butter

Start by preheating your oven to 400°F and grease your muffin tin.  Be sure to spray the top of your muffin tin as these muffins rise and the topping can stick to the top. 

Combine your flour, white sugar, salt, and baking powder.  In a one cup glass measuring cup, pour in the vegetable oil, add the egg, and pour in the reminder of the milk to the one cup line. Pour the wet ingredients into the dry ingredients. Fold in the blueberries and set aside.  

I made my topping using the food processor to combine the butter with the brown sugar, flour, and cinnamon.  Once this is combined, using a ice cream scoop, fill the muffin tin 3/4 full.  Gently spoon on crumble topping and bake in the oven for 16-18 minutes depending on your oven temperature.  Mine tends to run hot so I only baked mine for 16 minutes and they still came out slightly browner than I wanted.

Allow to cool on a cooling rack and enjoy! These go great with coffee, for breakfast, a snack, or dessert!  Let me warn you! These will go quickly and you might find yourself eating three at a time, they're that good!
